This is done in a traditional way in thermo-regulated stainless steel vats where malolactic fermentation partially occurs. No animal proteins are used to clarify the wines and they are stabilised to prevent tartrate precipitation.
This Champagne is made according to an original composition and expresses the exceptional Verzenay terroir and location using 100% Pinot Noir grapes. This non-vintage champagne is, nevertheless, made from the grapes of a single harvest in 2006.
Appearance: a pale golden colour with golden highlights and remarkable yellow gold tints. Foam is fine and abundant, forming a delicate stream of bubbles.
Bouquet: a very welcoming nose. The complex and opulent aromas have now reached maturity. The character of the Pinot Noir grapes delivers a range of very juicy, fruity aromas. Initial notes of brioche and honey appear, and a floral bouquet adds refinement to this divine nose.
In the mouth: a distinct, fresh immediate mouthfeel. The acidity is balanced by the full-bodied taste of the wine. The mouth is composed of fleshy fruit – peach, apricot and nectarine. A very long finish with scents of citrus fruits and flowers echoing its bouquet. This highly seductive Blanc de Noirs can be savoured at any time of the day, and will be yet more astounding with a dessert of exotic fruit
